Thanks, man, I really appreciate it :) I'm really liking the wagon over my sedan. I just can't wait to get a new set of springs ordered up for the car. I'm selling my Ground Controls hopefully today ;)

Koji is the crucial ingredient in Sake production. Koji is steamed rice that has had koji-kin, or koji mold spores, cultivated onto it. This magical mold, for which the official scientific name is Aspergillus Oryzae, creates several enzymes as it propagates, and these are what break the starches in rice into sugars that can be fermented by the yeast cells, which then give off carbon dioxide and alcohol. Without koji, there is no sake. For what it is worth, sake is not the only beverage in the world using koji. There are a couple of others throughout Asia. But the brewing methodologies are vastly different.

A quick comparison between the production methods of sake versus other alcoholic beverages may prove useful. Wine is fermented from grapes, which already contain sugar (glucose, to be chemically correct). This is what yeast cells need for food. There are other kinds of sugars, but they cannot be metabolized by yeast. So in winemaking, yeast is added to a liquid already containing sugar.

Beer and other beverages made from malted barley begin not with sugars, but with starches, which are molecularly monstrous. Here, brewers employ enzymes brought out in the barley malting process (where the barley is moistened and warmed, i.e. the sprouting process begun, albeit artificially) to break down the starches into sugars. These enzymes, which activate within very specific temperature ranges, chop the starch chains into much smaller sugar molecules. Some will be glucose and feed the yeast, some will be chemically different sugars and add to flavor.

Back to sake. Sake is brewed from white rice stripped of its husk. There can be no malting, so the starch-chopping enzymes must come from somewhere else. Enter the cooperative koji. The dark-green spores, sprinkled onto steamed rice, graciously provide the necessary enzymes for saccharification. There are many enzymes involved in this process. Some act to create fermentable sugar (glucose), others act more to create sugars that will not ferment but will instead affect texture and flavor in a sake.

Koji production (known as seigiku) is at the very heart of the sake-brewing process. The leverage it holds over the final product is immense. From a good beginning all things flow naturally, and so it is with koji. Koji is cultivated in a special room in the kura (brewery) called the koji muro. When ready, it is mixed with more steamed rice. Initially, yeast and water are added here. In later stages of a batch, koji is transferred into the large tank within which the sake-to-be is fermenting away. It continues to do its sugar-making work, while imparting the effects of its own sensitive production, until fermentation is finished.

As an example of how sensitive yet powerful koji can be, I once had sake presented by the brewer with an apology: "Look, we just rebuilt our koji muro last year. The wood used for the walls was not quite as ready as we thought, and you can unfortunately taste the cedar wood in the sake." Sure enough, delicious though the sake was, the faint essence of cedar was evident in the flavor and fragrance.

In general, the koji-making process takes 40 to 45 hours. During this time, the developing koji is checked and mixed constantly to ensure proper temperature and moisture, as well as an even distribution of both. As the koji mold works its way into the center of the steamed rice grains, heat is generated. Different temperatures are ideal at different stages of the process. Not only that, but these ideals will change depending on the sought-after flavor profile. The type of rice, pH and mineral content of the water, and a myriad of other things affect the way koji is made as well. These variables compound to create a process that is more art and intuition than science.

When koji is ready for use, it looks like rice with a small amount of white frosting on each grain. The smell and taste are slightly sweet, as might be expected. There is a characteristic light chestnut-like aroma that wafts wonderfully up.

In response to the demands of the times, there are several manifestations of automatic koji-making machines. Some of these are fully automatic; insert ingredients here, stand back for 42 hours, here's your kooji. Others allow much more human intervention, some being only closed-loop temperature controlled tables. Even robotic-finger kooji mixers are out there. All of these work well; some better than others. On the quality-versus-labor-saved curve, these score very high indeed. But it is interesting to note that almost every kura in the country makes kooji for their best sake by hand.

The Koji mod is a cheap way to make your Subaru have more badder ass headlights. It basically consists of baking your headlights in the oven so they come apart. Then you use paint, a small PVC coupling, and love to make your head lights look like this.

This is JPSimon's car...although he has EDM's now.
I'm pretty sure Khail (and some other i-clubbers) invented the use of PVC with that mod back on the original i-club in '01.

BTW, not to be pedantic, but if you're going to get all fake-JDM with your headlights, the correct spelling for what everyone calls baking the damn things is Kouki, not koji. As in zenki (early-model) and kouki (late-model).

I've seen both spellings, I guess it depends if you're going off the guy's username like he invented it (which I doubt given the timeframe of that post, as I'd seen this done right after the cars came off the boats), or you're using the correct (incorrect) terminology for making them look like bugeye JDM projectors............which would be incorrect anyways, as long as we're talking about the GDA, as that would be a zenki model.....I spent too much time around S13/S14 and hachi guys ;)

As Scott said, I did this way back in late 2001/early 2002. I've had the modded headlights in the garage since I put on the WRC projectors. If you want, you could trade me for your stock lights. I'm only keeping them around in case I need to put the car back to stock to sell it in the future, so it would be better for me if they were actually stock. I really liked the look of the car much better after the mod, mostly cause I hated having all that chrome plastic on the front of the car. Let me know if you want them.

Scoop do it. And insurance is unworkable for me because I got a DUI Sept of '04. Full coverage on 99 RS is about $350-400 a month for me. That's even a non-turbo car w/airbags. :(

Are you asking if we think you've got an STI hoodscoop on the car? 'Cause you don't.

If you're asking if we think you should get an STI hoodscoop, I say don't bother. The '04 '05 STI scoop looks like someone stapled a shoebox on the hood sideways. They're too big and blocky. Find out if an '06 STI scoop would fit... those are much nicer!

DIAMA! :mad: GCs and GMs get topmounts bish! :lol: No, really... get a WRX manifold, PC it red, toss on a stock STi topmount (v7 or newer) for less than half what a decent front mount costs... and have a better setup that draws less unwanted attention.

Yah, I'd say the majority of the time people put front mounts on their Subaru, it's unnecessary. A fatty top mount will yield less lag and if the turbo and DP are properly shielded, it should rarely heat soak. It's just what came to mind looking at GC8.Love's grill. :)

No prob. Yours is fine, I just needed to change it for a bit. And yeah, ours is so painfully stock at the moment. Moving and job hunting kind of delays things quite a bit.. Not to mention that all my hoarded goodies for the RS are packed up in boxes back East awaiting transport..

Right now I'd kill for a CAI and an exhaust package, but it's not going to happen until I get back on my feet. The car's just soo quiet. Once in awhile I have to look at the tach to make sure it's running (the car), 'else I might overstart it - it's a little silly, I know, but you can hardly tell.

It's tough to go from the loud and rough LS1 to the slightly rough and quiet boxer. =D

Anyhow, that and some AGXs would be nice. I'll get around to it soon. It also sucks to not have a garage at the moment. No leisurely or "anytime" installs for me.

BTW, I'm not replying to that PM yet, I'm not at home ("stuck" in Stockton right now), but I will.

Yeah, the sideskirts.. it'll happen sometime. I have the spats hanging around somewhere too, so..

I'm going to have to second the TMIC, though. Unless I sprayed the FMIC black. It's just too much of a giveaway for my taste, otherwise.

I jest. I had a Vision TSi until recently. It was a nice vehicle until it hit 80,000mi. Then it just kinda gave up.

So I'm guessing that's a '97 or '98. Is it the AWD version?

It it's a "Talon TSi" then by definition, it's got AWD. That's like asking "nice WRX, is it the turbo one?" :P

Right now I'd kill for a CAI and an exhaust package, but it's not going to happen until I get back on my feet. The car's just soo quiet. Once in awhile I have to look at the tach to make sure it's running (the car), 'else I might overstart it - it's a little silly, I know, but you can hardly tell.

Really? I was under the impression that the TSi was the AWD Turbo version, i.e. it's the Eagle version of the Eclipse GSX.

Talon DL = Eclipse GS
Talon ES = Eclipse GST
Talon TSi = Eclipse GSX

And there was no Talon that matched the base Eclipse, since the Talon was the "upscale" brand for that car.

What's the actual mapping between Talon and Eclipse if I'm wrong?

They did make a TSI that was front wheel drive. To be all wheel drive it had to be a TSI AWD.

I think it was like this:

No...I couldn't get him unstuck :lol: That POS weighs 9,000 lbs, and it's sitting on it's front axle in frozen heavy mud. Another Powerstoroke came along and couldn't get it out either...So a real tow truck is trying to get it right now.

Apparently I *don't* know that much about the cars, since I was wrong in assuming the TSi was only the Eagle version of the GSX, not both the GST and GSX.

Also, I only know only a little about those things mechanically. I know they can be made into beasts, but they're quite finicky. Also, I know that most the people that have them have the crappy N/A FWD cars, yet think they're like 2 times fasterer and like 6 times more furiouserer than Brian Spilner.

I spent a week over Xmas putting about 1100 miles on the new motor around the Bay Area. Then I dropped it back off at Gruppe-S. All I need are the headers, BigMAF intake, turbo heat shield, and tuning, and it's done!

Depending on shipping for the BigMAF, I may have the car as soon as next weekend. :)

Yeah: 2.5L STI shortblock, ported and polished WRX heads, GT30-10 turbo (a little small for this application... think of it as a stock STI turbo that spools a little faster due to the dual ball bearings), 800cc injectors, TGV deletes, BigMAF short ram intake, Perrin FMIC.

The car should be a beast, even with the undersized turbo. In fact the smaller turbo may be an advantage in autocross, but I'm pretty sure anyone with a GT30-11 or -12, or any of the TD06-20G and FPGreen guys will kill me on track and the 1/4.

That reminds me, I need to call the shop and see how the compression/leakdown tests went.

Even though I know you're kidding: Both the GT35 and the nitrous would be counter-productive on a car that's still autocrossed regularly... too much lag on that turbo, and nitrous is illegal in all SCCA classes.

But a rotated GT35R + N2O would be one hell of a drag setup. There's a couple of drag-tards over on I-Club working along those lines.

Rotated means it isn't a 'bolt on' and is rotated a bit from the normal mounting points. As far as I know, the only way to fit a GT35 into a Subaru is by rotating it. It won't fit in a 'bolt on' application

The GT30-10 is in the neighborhood of a 16G. Spools at about 2800, should make in the 280-300hp ATW range.

The turbo I'm planning on going with is a TD06-20G. Should spool around 3000-3200 and make about 330-350 awhp... the only problem is the packaging doesn't lend itself to bolt-on application. Right now there are two places that are modifying housings to get it to fit, but at $1600 + a huge waiting list, I'm gonna wait to see if Gruppe-S's new packaging comes through. They're thinking $1000 for the turbo, and it'll be an actual bolt-on w/o modifying anything.

But for now the GT30-10 should be competative since everyone else scrapped their plans for new turbos in favor of a race tire budget. *phew!*

That was the 1st time I ever drove the car in the snow, circa 2001. It snowed, so IGT kicked everone out of work early at 4pm. I hit the empty lot and spun some brodies.

Then went back at lunch the next day for the pictures.

The bra never made a lick of difference. Personally, I don't think it greatly effected the flow to the intercooler. If anything, it would effect the flow to the intake snorkus more, but that didn't matter on my car since I hacked the intake silencer right away and was drawing air from the fender.

The 20g is a GREAT turbo. Its hit 10s with DSMs. Thats what I should have gotten instead of going with this ''XX'' Trim crap. Oh well, Ill make it work. The FPgreen is in that price range tho - I know i just bashed the trims, but with that 50trim people have put down 400awhp and low 11s. I know you dont drag, but Im just stating the times for speed/comparitive purposes.
