A good HDR image doesn't scream "I'm HDR"... HDR should just look a touch surrealistic, or it should be used just to make an otherwise impossible to photograph image possible. If you're goal is otherwise, just load up a regular image in Photoshop and drag the saturation slider around.
This is pushing it... looks like a video game... but at least it's well done over-done HDR:
