A good HDR image doesn't scream "I'm HDR"... HDR should just look a touch surrealistic, or it should be used just to make an otherwise impossible to photograph image possible. If you're goal is otherwise, just load up a regular image in Photoshop and drag the saturation slider around.
HDR is supposed to bring out natural looking colors at different light levels within a single shot (which is why, to do it right, you need multiple shots from the exact same spot at different exposure settings in an uncompressed format). That's it.

Most of the time, people go overboard so that it "looks HDR".
