I'm having a hard time picturing Burt Reynolds as a 5'5" 330 pound dude, but the bigger stretch is Johnny Knoxville... wtf mate? Willie Nelson is PERFECT for uncle jessie though.

Those are the possibles for the Waylon Jennings narrator? Toby Keith or Alan Jackson probably. If whoever makes the film gives a damn about the show anyway.
